This trendy cut is full of flavor, especially after our dry-aging. A lean triangular muscle from the hip makes a great small roast or grill whole and slice steaks for the whole family. It is heart-healthy, and hormone and antibiotic-free. Because of it’s low fat content, we recommend this cut to be cooked the rarer-side, no more than a medium doneness.
